Lemon Curd

This delicious, sugar-free lemon curd is the basis for many other recipes and is also delightful on its own.
Ingredients

- 5 large eggs
- 1 extra egg yolk
- ½ cup Swerve Confectioners
- 5 tablespoons allulose or BochaSweet (granular)
- 1 tablespoon lemon zest
- ½ cup freshly squeezed lemon juice
- 6 tablespoons, cut into piece
- 1 teaspoon xanthan gum
Instructions
1. Set a glass or ceramic bowl over a saucepan of barely simmering water.
2. Whisk together:
- eggs
- egg yolk
- sweeteners
- lemon juice
- lemon zest
3. Whisk constantly until thickened, about 10–12 minutes. It will thicken suddenly.
4. Remove from heat and add the butter. Let it melt, then whisk until smooth.
5. Sprinkle the xanthan gum over the warm curd and whisk thoroughly until fully incorporated.
Refrigerate until completely chilled and set (at least 3 hours, preferably overnight).
