This delicious, sugar-free lemon curd is the basis for many other recipes and is also delightful on its own.

Ingredients

  • 5 large eggs
  • 1 extra egg yolk
  • ½ cup Swerve Confectioners
  • 5 tablespoons allulose or BochaSweet (granular)
  • 1 tablespoon lemon zest
  • ½ cup freshly squeezed lemon juice
  • 6 tablespoons, cut into piece
  • 1 teaspoon xanthan gum

Instructions

1. Set a glass or ceramic bowl over a saucepan of barely simmering water.
