Keto Loaded Cauliflower

Many times cauliflower is used as a substitute for potatoes. I’m really don’t see them as a substitute because the flavor is pretty different. However, I do like cauliflower as as side with its own flavor profile. This dish is loaded with lots of flavors that happen to also pair well with potatoes, but with none of the starchy carbs.

This recipe is pretty much measure to taste. This is basically how I do it.

Ingredients

Scale
  • About 1 1/22 cups of steamed flowers (from fresh or frozen)
  • 1 8oz package of softened cream cheese
  • 1 3/4 cups shredded cheddar cheese
  • 2 chopped green onions
  • 23 slices of crisp cooked bacon chopped
  • salt and pepper to taste
  • granulated garlic to taste

Instructions

  1. Preheat the oven to 350 degrees.
  2. Break the cauliflower into bite sized florets and steam until fork tender (about 3 minutes in the microwave with a little water or 5 minutes in a steamer on the stove top.
  3. Mix the cauliflower with the other ingredients in a bowl and then put in a baking dish.
  4. Bake for around 20 minutes until bubbly and the cheese is melty.

Notes

Loaded cauliflower is a handy side dish to make in a hurry.
