Sausage, Egg and Cheese Casserole

This breakfast casserole feeds a crowd and is always a big hit. It has spicy sausage, sharp cheddar cheese, creamy eggs and veggies. With all those great flavors, how can it not be good. And, with those ingredients it is low in carbs as well – win, win!

I hope you enjoy this as much as we do. We start by cooking and crumbling the sausage.

Add the sausage to a prepared baking dish and add chopped onions and bell peppers.

Sprinkle cheese on top of the sausage mixture and then add egg mixture and sprinkle remaining cheese on top of that and bake. That’s it! Easy an delicious!

Ingredients

  • 1 lb. spicy sausage (I use Jimmy Dean’s hot sausage)
  1. 1 bell pepper, chopped (about 1/2 cup)
  2. 3 green onions, chopped (white and green parts)
  3. 11/2 cups shredded sharp cheddar, divided
  4. 8 eggs
  5. 1 cup heavy cream
  6. 1/4 cup sour cream
  7. Splash of Worcestershire sauce (optional)
  8. 2 to 3 dashes of Tabasco Sauce (optional)
  9. 1 teaspoon salt

Instructions

  1. Preheat oven to 350F and spray a 13 X 9-inch baking dish with no stick oil (I use avocado oil or olive oil spray to avoid inflammatory seed oils).
  2. Cook and crumble sausage in a skillet.
  3. Transfer the cooked sausage to the prepared backing dish to cover the bottom of the dish.
  4. Sprinkle chopped green onion and chopped bell pepper evenly over the top of the sausage.
  5. Sprinkle 1 cup of the cheese on top of the sausage.
  6. Whisk together the eggs, cream, sour cream, Worchestershire sauce, Tabasco sauce and salt.
  7. Pour eggs over the sausage mixture.
  8. Sprinkle remaining cheese on top of the egg mixture.
  9. Bake for 30 minutes. The top should be set and the edges starting to brown.
  10. If it needs to cook a bit more, cover with foil and bake another 5 minutes.

Cut into square pieces (i usually get around 18) and serve.
